Ingredients
- 2 pounds beef stew meat
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 celery stalks, sliced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 teaspoons garlic powder
- 1 teaspoon thyme
- 2 tablespoons cornstarch
- Salt and pepper to taste
Instructions
Place the carrots, potatoes, onions, and celery in the bottom of the slow cooker. Add the beef stew meat on top of the vegetables.
In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, garlic powder, thyme, salt, and pepper.
Pour the mixture over the beef and vegetables. Cover and cook on LOW for approximately 8 hours.
Throughout the day, the beef slowly becomes tender while the vegetables absorb the flavorful broth.
About 30 minutes before serving, mix the cornstarch with two tablespoons of cold water and stir it into the stew. Continue cooking until the broth thickens.
Serve the beef stew hot with crusty bread or dinner rolls.
