Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 can cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 package refrigerated biscuit dough
- Salt and pepper to taste
Instructions
Place the chicken breasts into the slow cooker and add the onions, carrots, and celery.
In a bowl, whisk together chicken broth, cream of chicken soup, garlic powder, thyme, salt, and pepper. Pour the mixture over the chicken.
Cover and cook on LOW for approximately 6 hours.
After cooking, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and stir well.
Cut the biscuit dough into small pieces and place them on top of the soup mixture. Cover again and continue cooking for another hour.
The biscuit pieces will puff up and transform into soft dumplings while absorbing the creamy broth.
Serve hot and garnish with fresh parsley if desired.
