Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 tablespoons butter
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
Step 1: Prepare the Chicken
Place the chicken breasts in the bottom of the slow cooker.
Season with Italian seasoning, salt, and black pepper.
Scatter the minced garlic and sun-dried tomatoes over the chicken.
Step 2: Build the Sauce
Pour in the chicken broth and heavy cream.
Add the butter on top.
As the butter melts, it combines with the cream and garlic to create an incredibly flavorful sauce.
Step 3: Slow Cook
Cover and cook on LOW for approximately 5 hours.
During cooking, the chicken slowly becomes fork-tender while the sun-dried tomatoes release their rich flavor into the cream sauce.
Step 4: Finish the Sauce
Remove the chicken and stir the Parmesan cheese into the sauce.
Add the spinach and stir until wilted.
Return the chicken to the slow cooker.
Allow everything to cook for another 10 minutes.
Step 5: Serve
Serve the chicken with plenty of creamy sauce spooned over the top.
Garnish with fresh basil and extra Parmesan cheese.
