Servings: 24 cookies
Prep Time: 20 minutes
Bake Time: 12 minutes
Total Time: 32 minutes
Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 1 egg
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
Preheat the oven to 350°F and line baking sheets with parchment paper.
Beat the softened butter and sugar together until the mixture becomes pale and fluffy. This process incorporates air and helps produce soft cookies.
Add the egg, lemon juice, lemon zest, and vanilla extract. Continue mixing until smooth.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing slowly until a soft dough forms.
Using a cookie scoop, portion the dough into equal-sized balls and place them on the prepared baking sheets, leaving enough space between each cookie.
Bake for 10 to 12 minutes or until the edges become lightly golden. The centers should still appear soft.
Allow the cookies to cool on the baking sheet for five minutes before transferring them to a wire rack. As they cool, they develop a soft and tender texture.
Serve these bright and refreshing lemon cookies with iced tea or fresh fruit for the perfect summer treat.
