Slow Cooker French Dip Sandwiches

Ingredients

  • 3 pounds beef chuck roast
  • 1 large onion, thinly sliced
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 hoagie rolls
  • 8 slices provolone cheese
  • Salt and black pepper to taste

Instructions

Step 1: Prepare the Slow Cooker

Place the sliced onions in the bottom of the slow cooker. The onions create a flavorful base and become wonderfully soft during cooking.

Season the chuck roast with salt, pepper, garlic powder, and onion powder on all sides.

Step 2: Add the Beef and Broth

Place the seasoned roast on top of the onions.

Pour the beef broth around the roast and add the Worcestershire sauce.

The broth will slowly transform into a rich and savory dipping sauce as the meat cooks.

Step 3: Slow Cook All Day

Cover and cook on LOW for approximately 8 hours.

During the long cooking process, the connective tissue in the beef slowly breaks down, producing meat that becomes exceptionally tender and juicy.

Try not to remove the lid during cooking because the slow cooker relies on steady heat to properly tenderize the meat.

Step 4: Shred the Beef

Transfer the roast to a large cutting board.

Using two forks, gently shred the beef into bite-sized pieces.

Return the shredded beef to the slow cooker and stir it into the flavorful cooking liquid.

Allow the meat to sit in the juices for another 10 minutes.

Step 5: Assemble the Sandwiches

Slice the hoagie rolls and fill each one generously with shredded beef.

Top with provolone cheese and place under the broiler for 1 to 2 minutes until melted.

Serve immediately with small bowls of the warm au jus for dipping.
