Ingredients
- 2 pounds boneless skinless chicken thighs
- 1 cup long-grain rice
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
Instructions
Step 1: Prepare the Ingredients
Dice the onion, carrots, and celery into small pieces. Cutting the vegetables into similar sizes helps them cook evenly.
Place the vegetables in the bottom of the slow cooker.
Step 2: Add the Chicken
Place the chicken thighs on top of the vegetables.
Season the chicken with garlic powder, thyme, salt, and pepper.
Pour the chicken broth into the slow cooker.
Step 3: Slow Cook
Cover and cook on LOW for approximately 5 hours.
During this time, the chicken slowly becomes tender while the vegetables soften and flavor the broth.
Step 4: Add the Rice
Remove the cooked chicken temporarily.
Stir the uncooked rice into the broth mixture.
Return the chicken to the slow cooker and cover again.
Cook for an additional hour until the rice becomes tender and has absorbed much of the liquid.
Step 5: Finish and Serve
Stir in the frozen peas and let them heat through for about 5 minutes.
Serve the chicken whole or shred it into the rice mixture.
This hearty meal is perfect for busy weeknights and tastes even better the next day.
