Ingredients
- 3-4 pounds beef chuck roast
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- 8 pepperoncini peppers
- 1/2 cup pepperoncini juice
- 1/2 cup unsalted butter
- Fresh parsley for garnish
Instructions
Place the chuck roast inside your slow cooker. Sprinkle the ranch seasoning and au jus mix evenly over the entire roast. Add the butter directly on top of the meat and arrange the pepperoncini peppers around the roast. Pour the pepperoncini juice into the bottom of the slow cooker.
Cover with the lid and cook on LOW for about 8 hours. Avoid opening the lid frequently because the trapped heat is essential for breaking down the connective tissues in the meat.
As the roast cooks, it slowly becomes incredibly tender and absorbs the buttery, savory flavors of the seasonings and peppers.
Once fully cooked, use two forks to shred the beef directly inside the slow cooker. Stir the meat into the juices and allow it to sit for another 10 minutes before serving.
