Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Step 1: Brown the Beef

Cook the ground beef and onions in a skillet over medium heat until the beef is fully browned.

Drain any excess grease.

Step 2: Add Everything to the Slow Cooker

Transfer the beef mixture to the slow cooker.

Add the beans, corn, tomatoes, taco seasoning, garlic powder, and broth.

Stir until all ingredients are evenly combined.

Step 3: Slow Cook

Cover and cook on LOW for approximately 6 hours.

Throughout the day, the flavors gradually blend together and create a rich and hearty soup.

Step 4: Final Seasoning

Taste the soup and adjust the seasoning if needed.

Serve hot with shredded cheese, sour cream, avocado, tortilla chips, and chopped cilantro.

This soup is excellent for meal prep because the flavors become even better the next day.
